Yet another what car thread. Not like we ahve ahd these before. Thinking about 5-7K, Odd/unusual/not frequently seen, weekend autocrossable, and will run forever. I already have a Miata, and besides, that is a rather common car.
What would scratch this itch...does not need to be all that competitive, I just auto-x for fun.
Ideas?

Classic mini. If you search hard you can find a decent driver for 5K. I had one, I auto-crossed it. Mostest favoritest car I ever had. Do yourself a favor, get a RHD mini.
A1 Mint concourse Yugo
Nice NA 944
MGB GT
MisterBitchie Starion
Chub-ro-let Monza
Geo Tracker
Probe GT
Almost any late 80's early 90's performance FWD platform that had avoided the F&F or Ricer tax
I like the idea of a corvair also. Keep the dieas coming.
Old Dodge Dart with a slant six ?
AE92 like mine? Or an AW11, saving those is always good.
Keep the ideas coming....
Turbo 240 Volvo with a manual. 240's have become rare enough that they really jump out at you when you see a clean one. The will run forever.
Volvo 122s.

944 fits the bill assuming that you don't mind spending some money on timing belts and a few electronics. The belt changes are really frequent, if I remember right, and it has an interference motor so done let one break. Get a 87-88 924S as it is a 944 without the wide body. IE weighs less and I think looks better. I have had a 944 though. It was fun. I probably should have kept it.
How ahrd is it to find a decent Volvo 240? Same thing with the Dart and the slant six....it's been forever sicne I have seen either, although I live in the rust belt.
I am not sure what part of the rust belt you are in but on Cleveland CL, there is an '88 Integra that I would be willing to drive forever.

They're starting to rise in value, but with some hunting you can find a solid GTV6 for $5K. It won't look as pretty as that one posted though
Same guts, different skin, Alfa Milanos haven't seen the appreciation that the GTV6's are starting to creep, so you can find a nice Milano for $5K and get that same glorious V6, rear transaxle setup.
The Verde was the hot ticket, with a larger 3.0, and some Recaro interior bits. This one's a little above your price range, but they're out there: http://orlando.es.craigslist.org/cto/4359370594.html
I like the Scirocco idea a LOT.
If you're going to be open to FWD, i'd also suggest an MX3. Preferably 4 cylinder (this sounds odd, i know) that someone else has replaced with the larger 1.8 BP motor. Add basic bolt ons (intake, header, exhaust, light flywheel, maybe a dual exhaust cam mod), nice suspension, and have a BLAST.
The Mini idea really intrigues me as well. I had no idea you could get one in that price range.
Xr4ti? There is a lot of good ideas here...... Hmmmmmm its making me want to buy a car
