I wouldn't, I'm going to put 235/40-18s on 8.5 inch wide wheels for my mercedes, 275 would be appropriate for between 9 and 10 inch wide wheels.
No. They'll fit, but they won't work as well. You'll eventually regret it.
To add a story, a friend of a friend tried to mount 265's on an 8 inch wheel when it was cold and he couldn't get the heads to seat. He had to get a 245. The 265's will only mount when it's warm enough for the sidewalls to flex a bit more.
But that's a 60 series. Lotta sidewall there.
I know mustang guys like to stick 275's on the factory rears and those are only 8's. but they're also known for handling like crap.
A 275 is square on a 10.5" wheel, so no, you do not want to mount it on an 8" wheel. 9" is the bare minimum.
Should I decide to keep this car, It has imsa widebody fenders in it's future. and then wide wheels will be no problem.
275 on an 8" is pushing it even with tall sidewalls (which let you get away with more mismatch). On the Jeep, I've got 255/60s on 17x8s and I wouldn't want to go any wider without wider wheels.
I'd go for a 9.5" or 10" wheel if you can get one for the 275s, especially with the shorter sidewalls.
I have 275's on an 8" setup on the Caddy. It probably depends on the tire a bit, regarding how well it works in practice. I would feel much better on the 9-10" but it's thus far a tough option for me as well due to the goofy 6X115 pattern.
Tire handbooks list approved wheel widths from 9-11 inches. I'd wait for the 9" for reasons listed by others above.
