Foremost style drill motor with flex shaft, or long snout electric die grinder?

I use a Dremel with a flex shaft and a variable foot pedal speed control. It limits me in the bits I can use, but there are plenty available these days. The right carbide burrs will cut through anything, even with my run of the mill Dremel.

By the way, my next project will use a larger spare motor with a finer foot pedal control, and I'll use a flex shaft capable of 1/4" tools.

I use a variable speed Dremel w/flex shaft for small stuff & a 1/4" Makita ge0600 with a foot pedal for serious material removal.
