So assume I am starting with an already existing efi system in a vehicle and I would like to convert to motorcycle carbs and potentially nos in the future.

The carbs are designed to be gravity fed and not have much for fuel pressure on them. If I leave the efi pump and regulator installed and add in a small reservoir or distribution block on the return line to feed them that should be at essentially tank pressure, which is close for the carbs, right?

That would leave me with the injector side of the pressure regulator available for a steady supply to a nitrous system, which seems like it should work. It would also be available to supply fuel to a fuel injectors or set of injectors, which might open up an interesting option for fuel enrichment during acceleration, like an acceleration pump and jet system, but with a simple analog circuit. Maybe a fuel injection spider assembly from a 4.3 S10 with a throttle limit switch, a pulsing coil input, and a timer, early Jetronic style for just enrichment.

I think it would work, anything I'm overlooking?

Use a bypass regulator.  It will feed at whatever pressure younset it to. 

The nitrous would just require a rrjet on the fuel side to compensate.

You could also ditch the carbs and use bike throttle bodies and use EFI instead.
