I would assume it all blocks out the view out the back of the car, so they remove it. Wouldnt want to block the view of an obvious green screen background!
This has actually bugged me for some time. I too think it must have to do with increasing the view of the back seat or window, which I get if there are people in the back. But if it's just the fake scenery out the window, yea who cares?

You know this stuff has been going on as long as cars have been on camera, don't you?
The one that bothers me the most isn't any of that, those are semi necessary things when filming inside a car. It's column shifters in park while moving that jump out at me the most.
Yes. I also notice when they are in vehicles with column shifters they are usually "driving" with the shifter all the way up in park. I point this out to my wife all the time.
Even when they are really out driving they aren't driving. Whenever I see one of these on the road I try to follow it. It's the only way I'll ever get into a movie.
Yeah, it's definitely possible to squeal tires, even lay rubber (have done it) on some dirt roads. I think it has to do with the clay content.

The dirt bike scene in Terminator 2 was a pretty serious fail too.
One bit of trivia: Corvairs are (where) popular for movie cars because they are so easy to shoot with. They just took off the trunk lid and put the cameraman in the trunk. Heck even Fozie Bear in the new Muppets drives a 63 Spyder convertible.
my favorite "driving a car while acting" scenes are in the Foo Fighters "Long Road to Ruin" video... Davey Grolton goes out of his way to ham it up and not even try to make it look like he's really driving the thing..
