Hey folks - I'm totally new here. I'm doing a motor rebuild on our e30. It's an '87 BMW 325i. We're racing it in Chumpcar. 100% stock power, but we're doing 14 hour + endurance races. A lot of the spec e30 guys say to stick with a stock clutch. However, my team has 'variable' levels of talent when it comes to driving stick.
What's a good, known performance clutch or should I stick with OEM?
If I recall correctly, Sachs is equivalent to the OEM parts and should work well. My favorite BMW parts source is https://www.blunttech.com , they usually have good pricing plus they are very knowledgeable about the e30 so can provide better advice on what brand to use.

I had a new Sachs m20 clutch last for several years of track days behind an S50 engine swap. I recommend using that. And a 2nd vote for Blunttech.
Pretty sure we have an OEM or OEM replacement clutch on our chump e30 that has a dozen or so races on it
No clutch in the world is going to fix somebody who can't operate one correctly. Run a stock one and make sure nobody is riding it.
While I agree that a Sachs clutch is probably adequate.
I have not used this particular application, but I have never heard of anyone who was dissatisfied with their Spec Clutch.

Another vote for a stock Sachs.
I track a stock Sachs. It survived being the car in which I learned to heel-toe. Every track rat I have ever asked this question told me a stock Sachs was ok. Except for the guy who forgot to replace the rear crankshaft seal when he did the job; he blamed that on the clutch but it was really the leaky seal.
On second thought, why don't you email Andrew at DriveGear and ask him what he uses. He is the Dean of Spec E30 arrive-and-drive. I think he keeps four running all the time.
