I'd probably just keep it FWD, but from what it looks like, the CRV drivetrain can be adapted for AWD.

That sounds like it would be a fun ride! Definitely a lot of extra work needed for AWD though.
E30 prices have been too high for a while now. But you may be able to find a good deal on a 4-door or convertible, especially with an auto transmission. If so, I would choose an E30 over the other options. The fact that it pre-dates OBD systems also makes swaps a little easier. In my state, they're exempt from emissions testing entirely.
Where are you finding R53s for under $5k. They are all $12-15k when I find one for sale.
Swapping a Japanese engine into one is probably a lot easier if you start with a transverse one. I will allow that certain Honda axles plug in to the R53 hubs. As do some Mazda.

All over FB marketplace locally here in MD. Although they tend to be the earlier R53s rather than the better, latter R53s.

One thing to watch on the R53 (well, any first gen MINI) is mushrooming of the front strut towers. Personally I'd also look at the R56s. If you're just going to swap the engine and trans anyhow...

I would agree. Many of the factory R53 "upgrades" are parts that were standard on the R56.
Mushroomed strut towers is definitely something to look at, but it's pretty easy to fix so I wouldn't considering it a deal-breaker. If anything, to an less than knowledgeable seller, it may be a way to get some $$ off the price.
