Grassroots approach would be a full size Jeep. Money no option approach would be one of these.
2004-2007 v70r is a pretty good all rounder as is the subie legacy turbos, the merc AW wagons, the 540 wagons pretty much fit the OP.
If my wife's car doesn't count as a car, it's a pretty interesting question. If we have to share, it boils down to basically one option.
Share: 1st-gen Forester with STI suspension, engine, etc. plus skid-plates, upgraded audio and seats. Set of wheels w/ tires suitable for gravel/dirt/tarmac. Set of wheels w/ a nice set of summer street tires, Set of wheels with nice winter road tires, set of ultra-lightweight wheels with R-Comps
Not share: e36 M3 sedan with iPod audio. Original wheels with snow tires, set of 17" wheels with good street rubber, set of OEM sized ultra-lightweight Volks for AutoX with the latest and greatest AutoX R-Comps
So one car at a time, no time limit on how long I have to keep it.... For the dog hauler, family car - e34 wagon with m60 and 5spd swapped in
X5 M. I need something to tow the boat, and be track-able, and fun to drive, and be able to haul building materials. A Cayenne Turbo would also fit the bill, but I just don't like them.

this is SOOOOO EASY... and simple.
A moderately tweaked AE86 hatchback. The wife just bought one(hers is all stock w only 115k miles), so driving a stick is no biggy. The hatchback can take groceries, or a x-mas tree, or 6 mounted tires, or a full load from the pick and pull.
It get 30+ mpg...
works great on the track - works as its own pit hauler too. It does it all.....

I do want to amend my pic, and change it to a 2002 Lincoln LS with a Skyline GTR RB26DET + Atessa awd .
I rather like my wife's 04 Forester XT 5-speed. Right now its pretty much stock with just an STi catback and 02 WRX seats. Its set to get a VF39 (for free!) downpipe and tune. Should put it in the low 13's 1/4 mile.
If I were to dream it would have the STi tranny and suspension as well. Only problem is that it is AWD.
I love RWD too much. Slide on demand is more fun than grip. So I would probably have to go with a CTS-V wagon, G8 GXP, Roadmaster with an LS3 and 6 speed. Add a hitch and decent size trailer to any of those and I would do just fine.
Just one car is a cruel and unusual but I'll play along. I think I could be happy with a Tatra T87 in tip top shape. Even better if it had a late air-cooled Porsche flat six and six speed manual gearbox swapped in.
