What's the payload sticker on the door say? IRRC the ranger seemed to be up there when it came to real-world payload capacity as-delivered.

Weird, it can tow its maximum towing capacity it but it's working really hard to do so. I suspect that's true of basically anything.

I should have mentioned, I would always go for the stronger engine. But more the size. New "full-size" trucks/SUVs are absurdly huge.

I'd like to get some reviews on towing with it, how's it do with a 3000lb car and single open trailer for 6-8 hours? How was economy, how did it feel when it was windy, etc..

Unfortunately, the GRM staff probably doesn't have the truck long enough for it to overlap with a track visit, especially a track that far away. They usually only have these for a week.

But a 1 hour tow should tell you everything a 6-8 hour tow will tell you about the towing experience. Temperatures will have stabilized long before then.

What's interesting is that the towing capacity is identical with the 2.3 and the 2.7, and the GCWR is within a couple hundred pounds:

That would indicate that the towing capacity is limited by more than just engine power. I'm assuming structural or transmission limitations?

Probably not transmission.  The 10spd is used in vehicles that tow up to 13klbs. Probably suspension, brakes or frame.
