I'm looking to install a light bar on a 2018 Crosstrek soon and I can't stand the way aftermarket switches look. Does anyone know of an OEM or OEM looking solution? I know Ford has aux switches on the dashes of the newer trucks (genius). I haven't measured but I suspect those won't fit or work well in a Crosstrek. There isn't enough space for an assembly that large. I would like to mount them near the dome lights on a blank panel or down by the drivers knee with the traction control switches and such.

delcity.net has some decent looking switches. They're not going to be a perfect match to a (insert name brand here) interior, but they're a big step up from Autozone's selection.

Are there any empty switch locations on your dash or on lower trim levels of your vehicle?

Subaru and others tend to reuse the same switches or at least switch sizes within similar generations.

Worth a look in the local yards.

Another option could be to find someone with a 3D printer to print a switch head/cover/mount for whatever switch you'd like to use.

At the moment I'm only looking to mount 2. LED bar and then an on/off for driving lights linked to the high beams. 
I have looked into factory switches but they aren't on/off. They are momentary and interact with the BCM to control the systems. I could try and make a relay to work with a momentary switch but I'm hoping to avoid that complexity.

You should use a relay anyway. Putting full amps through a toggle is why British cars had such stellar reputations in the 80s.

You can get "latching" or "flip-flop" relay modules that let you turn things on and off with a pushbutton. They're more than the usual relay module since they have a bit more support circuitry to them but Amazon has them for $6/ea. https://www.amazon.com/HiLetgo-Channel-Latching-Bistable-Control/dp/B00LW2VLS0

Find another Crosstrek in the salvage yard, and harvest a switch from that?

The lights themselves will have relays.
