Sounds like a great chance to learn upholstery.
Fabbed this up for my '81 Chevy 4X4 PU project. This frame bolted to factory bench seat mount holes and used Summit poly racing buckets and sliders so I didn't have to drill new holes.
Built a similar unit earlier for a '90 F-150 w/ flatter floor. Used Buick Somerset buckets and filled the middle gap w/ a Bronco console chest.
Smaller car seats usually don't work well on a full size flat PU floor w/o being raised somewhat.

Some minivan rear seats have both integrated shoulder belts and low enough backs to fit into something older. Typically they don't have a lot of bolster or tilt, but in a standard cab tilt doesn't really matter.
I have a 2011 Super Duty for a company truck, and a set of those seats with the headrests removed might do the trick, aside from the integrated belts.
