For the given solution, it seems as if converting the rear axle to dually would be a decent choice.  Looking at the fender skirts for the RV, it appears you would have room for a second wheel there.  That would go a long way, I suspect.  (I just did a search for the conversion, and they do exist).

After upgrading to duallies on the rear, it would be wise to upgrade the fronts, to avoid carrying separate spare tires. I don't know how difficult that would be. I haven't dealt with rear axle swaps on a Chevy, that I can think of. Don't know how much compatibility there is.

I don't kow how many track days you are doing a year, but I bet less than a years maintenance, storage and insurance costs would cover a few nights in a real rented motor home.

I normally only go on 1 long trip to Watkins Glen every year.  Other than that my home track is maybe a little over an hour from my house.  So I drive the track car there. 

From the sounds of it.  This could tow, but would not be cost effective to use.

I would think the HT 383 crate engine that you could get from GM (I’m assuming it’s still available) would go a long way toward waking this thing up.  An old school SBC that makes some impressive numbers on the low end of the tach.  Should be a near drop-in....but they never are

I was at bonneville speed week this year and got a chance to see that weird FWD ramp/push truck. It was pretty cool!
