I'm divided. I think it could be a cool highlight, but it could also be too busy.
My instinct is always toward "less is more", so I ambiguously say leave it black.
I will say I was confused about what model Cadillac that is.
Looks great, though. Nice work!
Keep it black, it will stand out like crazy if it is the only red thing in the middle of the car.
Now, if you were asking about what to do with the lower half of the dash...

I actually paperclipped some of the vinyl to the lower pieces and quickly decided that was too much
I went looking for a black and red version of Porsche Pasha interior fabric and found this stuff;
