On the issue I decided to do an internet search for "kit motorcycles" and I found a website purposebuiltmoto.com and proceeded to go down the rabbit hole. Apparently they even have a simple wiring solution, which is kind of key for me since I know how to use a voltmeter a bit but am by no means a master electrician.

 

Now I'm trying to figure out how to find a cheap frame to refurb and the right engine to stuff in it and drivetrain etc. This is not going to be good for me, but Mrs Gunner does need her own bike so what can I do? This is likely a 5 year plan with everything else going on but oh my this is so cool!

That's a cool website & ideas. I started to do this very thing a few years ago with a '79 IT 400. Was going to build a cafe racer & wanted to use a 2 stroke motor. It turned out the '79 was a 1 year only motor & was a real pain to rebuild. Had to use a 490 rod & modify it to fit in the case. After seeing prices for old dirt bikes increase I couldn't modify the frame to make a cafe racer. I still want to build a big 2 stroke cafe racer though.
