I'm seeing the beginnings of some sort of entry level racing class too. Dirt track seems a logical venue to me as Fox bodies are already popular there.
Look at the cost to build ANY race car. Now go shopping for V6 vs. V8 Mustangs. The final price differential just isn't worth it.
If you want to go slow just buy a Miata and be done with it.

I was thinking more "Gut it, weld in a cage, and put dirt track tires on it" sort of builds. Local dirt track has about two dozen 2.3 powered Fox body Mustangs running with similar prep levels.

I think this is the end point of pretty much everyone who gets into Mustangs.
Don't get me wrong, I like SN95's, I like pretty much all Mustangs, I just think it's a fools errand to chase any sort of performance in a V6 car unless you find some crazy class loophole that somehow lets it be competitive.
V6 Mustangs are great bargains for a daily driver that are a step above a dull Camry-esque car. They arguably look good and have a fun-to-drive element. They can be used for autocross and other sports but yeah, you are going to be limited by the bargain price bin components and 'building' one isn't cost effective.
For a DD though I'm a complete convert to the V6. My S197 is a fantastic car. Only time I've pined for a GT was the two track days I did with it (which were mostly out of curiosity). With a dual exhaust conversion it even almost sounds like a SBF. Almost.

the 7.5 is a pretty bad rear axle, i mean......in rangers they didnt even put a 4.0 in front of it, i doubt you could add much power to it from the stock v6 before breakage.
