Well, if you're driving straight through, I'd think all you would need to see is the road...

When you get to Clearwater, head south for another 20 minutes to Pass-A-Grille beach. Eat at The Hurricane. Order crab cakes and a fried grouper sandwich.
Then walk around the corner and check out Evander Preston's art gallery. It's the building with the giant metal insects on the outside wall, between the Hurricane and Merry's Peir. Ring the bell and someone will let you in. They may even offer you food, wine or Sangria. Touch the walls (they're suede). Touch the white coat and baseball cap (they're wood). Ask them to turn on the tiny model train. It's made of 18k gold and has a diamond headlight. Pet the Great Danes. They're friendly. Maybe you'll get lucky and meet Evander. I think he has a Morris Minor and a 2CV.
This is a little off the highway, but it's not a bad detour. Totally worth the extra hour or two:

Cross the sunshine skyway and go out to Anna Marie isle, there's a place out there called "Gulf Drive In" that has really good Belgian waffles.....it should still be there. Last time I made it was back in 06.
I live just North of Clearwater in Dunedin. What specifically do you want to see? There are great restaurants, micro-brews and things to do right here without going far at all.
You're going to have gorgeous weather so you should either hit Frenchy's Rockaway Grill on the beach (I prefer the Cafe but it's not on the beach) for a grouper sandwich (try the Grouper Rueben, seriously) or the Olde Bay Cafe at the Dunesin Marina. If you like traditional mexican, Casa Tina's in Dunedin is the best around. If you want to try some Greek food, Greektown Grille in Clearwater is a great option.
Olde Bay Cafe is gong to have a good choice of some local micro brews. Dunedin also has two microbreweries, the Dunedin Brewery (serves food) and Seventh Sun (no food) and also The House of Beer which has 20+ selections on tap.
If you want other options, let me know.
