PBJ sandwich has never gone wrong for me. I have been eating those for breakfast lately. Easy to eat while on the way to work. If you don't like jelly, you could swap it out for hummus (might sound weird but it works in a sweet and salty way). Also, Cliff bars are a good option. I like the Cliff protein bars myself.

Some folk would be horrified to learn how meat is cured or aged. Anyhow, it's really not the meat that's the danger, it's the likes of the mayonnaise and such that's more problematic.
Mayo is not the horror bacteria stew that it used to be. If you're using store bought mayo, you're fine for a few hours out of the fridge.
I avoid mayo at all costs. Also, lunchmeat is a veritable who's who of things you really shouldn't be putting inside of you. Not to say I don't partake of the occasional delicious Italian sub, but only very infrequently.

a lot of soup type left overs work real well in a vacuum type thermos (aka a good thermos)... some you can actually put boiling water and raw stuff in in before you head out and be cooked for lunch
Hospitals are constantly bringing trays of food in no condition to eat. A hot meal should be easy enough to find.

I dont know about down in the US at your local chain grocery store, but there are some very healthy "fresh from the deli" meats now.
I take those (usually turkey breast), add a slice of cheese (usually marble, if feeling adventureous havarti or provolone goes well with virtually everything). I have it on a white bun, because berkeley brown bread with my lunch damnit. A white bun once a day never killed nobody!
Add vegetable of choice. Add cookies/snack of choice. Add drink of choice. Put in a cooler. Call it a day (its just lunch, if you arent bringing leftovers, no point in working too hard at it).

Anyway, as far as lunch goes, I scrape off the kids plates from dinner the night before, and put it in a container in the fridge. The next day I throw it and maybe an ice back in the backback and heat it up at lunch. Yummy and free!

I generally do tacowiches, if that can be a thing. A pair of nutella tacos and an apple are my standard autocross fare. Tortillas stand up better to the rigors of a cooler bag than bread.

Tuna, that's usually my lunch, too (well, last night's leftovers, anyway. The kid's still eating all she needs from boobies). The O/P had queried about lunch options that didn't require heating, though.
Tuna's got too much mercury in it now and probably radioactive Fukishima fallout. I stick to salmon or sardines. Actually, canned sardines are not a bad option. Don't bother with the boneless ones; the bones are so tiny and moist you can just crunch them up and eat them. But do avoid sardines packed in mustard or tomatoes or anything fancy. Yick. Oil packed is best.
I won't touch the Italian meat comments with a 10 foot sopressatta...
