So the medicine cabinet, that came with the house, has 2 sliding mirror doors. Just mirror panel in a top and bottom track.

It's always been bumpy and jumpy when trying to open the doors though. What can I do to fix that?

I was thinking q tip some grease directly in the track, or maybe spray it with white lithium.

Real grease holds too much dirt in this application. I would take them out of the tracks to clean the tracks first and use candle wax sparingly on the mirror edges on reassembly. Dry teflon lube aerosol sprayed into the track if you cant lift the mirrors out. Usually sold as mold release.

How much vertical play is there?

Many of those have aluminum channels which get scraped and galled from repeated sliding.  If you have some vertical room to spare, how about adding some FRP trim to the glass? Maybe J-channel or cap molding.  Like this
