there is insulation stuffed in the soffits. I think the soffits are there so air can get into/out of the attic.
Should I be pulling that insulation out so the attic can breathe?

It looks like you're ok there. I can see what I believe is daylight through a soffit vent on the left side of your first picture. If you want to ensure the insulation doesn't impede airflow, you can install something like Duovents.
If the insulation is covering the soffit vents, then by all means peel it back some so that you have airflow. Just make sure you don't pull back too much.
Are there roof vents up towards the peak, or a ridge vent? Hot air coming up through the soffits also needs a place where it can exit.
On my house, when the insulation was installed they used short sections of 3" or 4" PVC pipe to allow air flow through the insulation at the soffits. You could do the same, or maybe even use heavy duty cardboard shipping tubes.
Is that chunk of plywood in the gable end blocking a vent? If so, thats not great either.
The insulation is ok as long as there is airflow above it from the soffits. Generally, there would be a waxed cardboard stop there to keep the air flow channel open. Attic should have air in the bottom, out the top or the end. It almost looks like someone was trying to turn it into living space.
