My kids got me one for Father's Day. I know a good bit about it, but I'm sure there's some cool automotive apps etc.. I don't know about it.
One thing I want to do is mount it in my car. What's the best way to do this? The mount has to be sturdy and able to be installed and uninstalled easily. ????
Is Torque for Apple iOS? If so, you'll dig that app assuming your car is OBDII, I believe.
EDIT - just checked. You might want to look into Dash Command for iOS. Torque is evidently only for Android.
What is being said above is that if you buy a Bluetooth OBD-II reader, your Pad can be used as a screen to give read-outs and codes through a program called Dash Command.

Don't forget the quick release nuts and bolts pouch under the glovebox when the alarm is sounded.
haven't used it... but megasquirt/tunerstudio. Full dashboard's worth of full gauges at your disposal.

They make windshield suction-cup mounts for iPads, but I've yet to see one that I would trust to hold on to the windshield OR the iPad while driving hard.
I'm not sure if it's changed, but I know initially that iOS devices didn't have the Bluetooth profile to be able to connect to the Bluetooth OBD readers unless the iPad/iPhone was jailbroken and running the expanded profile- you needed to get one of the readers that generated a WiFi network of its own and link up using that.

I now use a ram mount in my Trooper. Before, I used an off-brand passenger-seat-bolt mount from Amazon that held up well with a full-size iPad displaying topographic maps off-road. But it wasn't possible to have both the iPad and a passenger, and it jiggled around more than I liked.
With my iPad mini, I bought a ram mount windshield mount. It works even better, and I like the positioning options better. It even works with passengers! I doubt I'd like it with a full-size iPad, though.
As far as apps, just download a bunch and delete the ones you don't like. My favorites for car use are Gaia GPS, Navigon, and Pandora.

I don't mind not using it if I have a passenger, but is the seat mount type have a quick release of some kind?
It doesn't, so you'll have to bend it down under the seat when you have a passenger. I'd suggest using a seat mount, and arranging it so your iPad rests against the seat in some way when you're using it. Here's what I had:
