My go to is turkey pot pie.

We separate the light and dark meat and i make a pie of each.

Then there is the turkey sandwiches. My go to is I take stuffing and yes I will make a new batch of stove top if needed. Mix it 50/50 with chopped white turkey. Microwave the mix to make sure it is warm. Put on toasted pumpernickel and add some cranberry jelly or relish. Salt and pepper to fast.

Not that I dislike a fresh toasted turkey but if I had it my way we would just go strait to left overs.

I am thinking turkey picatta for dinner tonight. Never tried it but it sounds good.

We give it away. We dont eat turkey at my house at all so i made it for others. I keep a bit of ham for ham and egg sandwiches.

After the kids go to bed tonight, I'm going to go all Texas Chainsaw Massacre on the leftover turkey and throw the bones and giblets into the pressure cooker to render stock. I'll put it in the fridge overnight to separate the fat and by lunchtime tomorrow I'll have turkey noodle soup.

There is no leftover pie.

Turkey soup, but dressing squished into a pancake, grilled with an egg on top just sets up my day!

Take the dressing and smush it into a Belgian waffle iron, close it up and cook. Dressing waffles. You can add the turkey and mashed potatoes on top with a flood of gravy if you like.

That sounds like what I had for breakfast except with Gulden's Mustard instead of miracle hwip.

I actually don't really like turkey, but Mom always substituted it for beef when I was growing up because it was healthier, so I clearly don't mind it. I mean, if it's there, I'll eat it. I just can't go crazy over foodstuff that needs to be saturated in gravy to be palatable. It's the rice cake of meat.

That isn't fair, because I kinda like rice cakes.

Turkey and rice soup. Turkey, rice, chicken broth, carrots, black pepper. I think I like it better than the thanksgiving dinner.

What do I make? I make the rest of the family take it home with them. I smoked the bird for them, as I don't like turkey. It did turn out really good, though, for my first attempt at smoking.

Yo dawg, I heard you like bread...

Last year I had White Castle stuffing. You literally just take some Castles and chop 'em up, and add a couple more things (celery and other stuff, it's online) and damned if it isn't really good.

I think THAT would be awesome as a waffle, to be honest.

After Round 2 to clean up the sides, the remaining turkey is finished off by a casserole recipe called turketti that was given to me by my mother-in-law. The additional contents are cooked spaghetti, chopped onion, cream of mushroom soup, cream of chicken soup, and shredded sharp cheddar; all items are mixed in a 9 X 13 pan and baked at 350 degrees for about 30-40 minutes.

Boil the carcass to make broth, add noodles, corn, and leftover meat. If you have an abundance of leftover gravy, pour some in to make it a little thicker/creamier. You can also add green bean casserole to the soup. Its really good that way.

Leftover stuffing I mix with mashed potatoes and form them into patties and fry in a little butter the next morning like stuffing potato cakes. Slather with gravy. Sometimes I'll fry an egg over medium and put on top of it

"leftover" is not a word that I use for pie in my house. It is usually gone on Thursday.

One year I took the leftover yams and made ravioli. Too much work and a little too sweet, but good.

Simmer the carcass, never bring to a full on boil.

I will shred any meat still left on the bones for turkey pot pies, and make stock from the rest. It makes so much that I have to freeze it, so I freeze it in batches in ice cube trays. That way I can use a few cubes in my next gravy and don't have to buy chicken broth for a while.

For a change of pace this year, leftover turkey and duck tacos made an appearance.
