I woke up at lunchtime, and made these delicious blueberry pancakes at about 1. Batter could've been made thicker, but they were still good.

ProTip! separate the whites from the egg yolk, beat them separately, then fold them into the batter for extra fluffiness.

For extra fluffiness .

I think that by beating them, you're adding a lot of air to the mix.

To separate whites, you just crack the egg in half, and transfer the yolk back and forth between the shell halves, letting the white fall into a bowl.

My dinner tonight was good but slightly disappointing. It was Thai-style red curry of new potatos, baby corns, red pepper & chopped carrot over jasmine rice. It was supposed to be face-meltingly hot; I threw the best stuff I had at it - a big wad of grated fresh ginger, dried cabe rawit peppers I smuggled back from Indonesia, harissa paste, and some other things - but that just wasn't enough. I barely even broke a sweat.

Fortunately I have leftovers. Those dried peppers never really come into their own on the first day anyway. After stewing in the fridge overnight I can re-heat it and add in some MOAR POWAH tomorrow.

On weekends I often get a rotisserie chicken from the deli and hit the grocer's salad bar, and then put 1/3 or so of the chicken on the salad, today with blue cheese dressing. I use the rest of the chicken for later or Sunday.

I made a wrap for today.

Big round torilla thing, slather on creamy feta dressing. Left over BBQ chicken cut up, dried cranberries, slivers of apple, lettuce.

Roll it.

Lunch today will be a salad from my garden, a few sugar snap peas from the garden, a strawberry or two from the garden, and some leftover chicken from last nigt's dinner. Oh, and some Newman's Own Italian dressing and a sprinkle of blue cheese on the salad.

Leftover pizza, same as breakfast. It only makes sense. Every dollar not spent on lunch is available for sausage in Germany, supplies for the garage expansion, and parts for the 2002.

But the weather's nice in Oregon for a change, and I haven't ridden the EX500 since last Fall's weather turning sour. (Though I have recently awoken it and at least gotten it running)

Leftovers. Seared scallops and shrimp cooked with white wine, shallots and some garlic with some green beans sorta steamed with butter, garlic, mushrooms and bell pepper. Should be tasty

Big ol grilled chicken salad from home. Chicken, arugula (it's a ve-ge-ta-bul), spinach, romaine, celery, carrots, a little cheese, and some croutons, plus newman's own vinegar and oil. 5 minutes of dicing celery and carrots this morning and I'm set.

Was testing out the pre-made tyson grilled chicken bits. I think I'll stick, in future, to grilling my own. The premade stuff is OK, but if I'm trying to eat healthier, probably actually eating unprocessed chicken is better.

We have NO food in the house after our 2-week kitchen renovation. It's done now, and we are shopping tonight, but I still haz nothing for lunch.

There's a BK (bleh!) a Taco Hell, a Burgerville, and a 5 Guys all by work. There's other crap around that I haven't eaten at.

Suggestions? (Trying to stay healthy/light for racing season).

Make it snappy, I have 34 minutes until lunch, and only a half-hour break.
