What operating pressure do you use for the wet sandblaster? Any downsides of the system?

I used my 3000 psi pressure washer.
The main downside is the durability of the Northern Tool blast gun I used. It will probably last long enough to do most of a car, but I went through 2 of them on SanFord and switched to a pressure pot air blaster to finish it up.
The only other issue is the insane amount of sand it uses. I bought 600 pounds of sand. After you run it through the gun, it has to be dried to be reused. That took up 20' of my driveway to get it spread it out. With a traditional sandblaster, you can just sweep it up and dump it back in the pot.
It does have some pretty big advantages though. Dust control is outstanding. It doesn't peen or overheat the metal, so body panels don't warp. It's not as miserable to run as a dry pot. No full hoods required, just a decent set of safety goggles.

It's rated to 3500 psi max. I think it would work fine at 2500 psi. And as a bonus, the gun might last longer.
