The River City Café in Myrtle Beach is a must if you are going that way. Very much off the beaten path, has a basic menu but it's done right. If you leave hungry it's your own damn fault.

There's a place in Silverton, Colorado right on the main drag. I cannot remember the name of it, but it's your basic hole in the wall. Helluva great place for an omelet, their specialty would be called a Western omelet over here on the Right Coast and damn it's good.

I prefer French Toast during the Renaissance. They were here, at a local diner a few years ago. The place is still one of the best diners in the area. http://www.theevereadydiner.com/ I've been to a few places he's featured that were pretty good which is more than can be said for the place he opened in Times Square.
According to the internet it's since been shut down, but there used to be Bennett's Smut N Eggs in Madison, WI. You could get a nice breakfast and a bloody mary all while watching hard core porn. Sadly, the closest I got was the front door because we realized one of the group we were with was under 21 and they had a sign out front requiring it.
