That RallyX looks like a blast.
The one benefit I see to the SxS in such a setting is it's already got a cage, harnesses, and many features that you'd have to add to a street car in order to make a rally vehicle out of it. You can also do wheel-to-wheel racing in a SxS relatively easy.
They remind me a lot of a dirt Midgets or Sprints but more versatile.
The stock cages are pretty comparable to a car roof. If you have a rollover it's probably going to save you but the whole thing is pretty much going to need to be replaced. Because of that I wouldn't run harnesses with a stock cage. Depending on what equipment is stock, you need around $1k of add ons to make one rallycross legal. Plus usually a set of springs so that it doesn't roll immediately.

So I had my own SxS experience today but on pavement. Our autocross chapter held a novice school and a guy showed up with a YZX1000 that he lowered with different shocks and springs, as well as a bigger rear sway bar, a tune, an exhaust, and Cooper Cobra GT tires on the stock wheels.
We cautiously allowed it since it met height by weight, with the caveat that the first time a tire came off the pavement it was done. The Solo head rode with him in the morning, since he made the call to allow it, but was pretty weirded out by it, so I hopped in in the afternoon, since I'm dumb and have a high internal sketch meter. I thought it was an absolute riot, it was outrageously fast in a straight line but pretty roly-poly in the corners. I was shocked by how hard it dug out of corners even on the cruise-in king Cooper Cobras. Not competitive, but really funny, and he shaved off 8 seconds in the afternoon.

"High internal sketch meter" is now entered in to my car guy phrase book!

Whenever I get asked for input on safety concerns, I recuse myself because I'm pretty okay with most E36 M3
They look like a complete blast. Do they have a diff or is it locked? And is it chain drive?
What I can't help but think of is the potential danger to motorcycles. I spent a lot of time as a youth on fire-roads jamming my CZ or Maico around like a flat-tracker. Whenever I encountered opposing traffic I was able to deal because motorcycles are small, and the 4-wheeled vehicles of the time were slow. Now the thought of running into a SXS at speed..... that makes my blood run cold.

We were up [near] Centralia, PA. About 1/3 of the terrain was [...] clearcut hellscape.
Spent my childhood playing on tailing dumps under grey skies. I heard they finally tore out the road that led to Centralia because the fires caused too much buckling even that far outside of town. Some shots of the road are in the music video for "O Pensyltucky" by a punk band from Philly that never hit the big time...
