Big beef roast goes in crockpot. Red skin potatoes, carrots, broth, salt, and pepper get added. Magic happens and a few hours later we have hot delicious food that lasts all week.

Aren't you leaving out the most important step for making gumbo though...the one that differentiates gumbo from soup or practcally anything else. I didn't see removing/depowering your smoke detectors, which is why I'm bringing this up.
Gumbo, chili, turkey/mashed potatoes/gravey, and soup and sandwich are the seasonal cold season comfort foods for me. Actually helped my mom make some gumbo last night for tonights dinner, really should have made it the night before though...
homemade clam chowder, or potato and ham chowder, brisket chili, white chicken chili. I'm starting to experiment with smoked mac & cheese. May be the ultimate comfort food.
