So, I'm assuming that the oil cooling system on an old '89 Gixxer 750 (before they were watercooled) is a high volume/low pressure system. Is this a safe assumption?

Many many moons ago I worked at a Suzuki dealership. I don't know what the system pressure was, but they were certainly high volume. They hold more oil in the sump than most cars. I sometimes wondered how that much oil fit in there.
NOPE High presure! you can see a 100psi or more in the oil cooler. Smart people use realy hydrolic lines on the coolers....not so smart use fuel line and oil down the track and blow up motors....
