Having already had one, and thus knowing how good they really can be, I'd add a '65-'69 Corvair. With a well-tuned suspension, they're still one of the best-handling cars ever built.

I have a literal list of about a hundred used cars I search for sometimes, mostly all of which are specific, cheap, and sadly, rare.

Seriously, there's not much in the classic car world that I don't find appealing in some way or another, from pre-War and brass-era cars to 50's cruisers to muscle cars to European sports cars and vintage Japanese stuff...
Any sort of list only represents what may be in my head at that moment.
