If at all possible I'd highly recommend hitting the Twisted Sisters (TX335, TX336, & TX337)....

Each road has its own unique feel. One's the rollercoaster section where you will scrape bottom in the troughs and fly over crests (you will absolutely feel the positive and negative G's) Another is the more rolling, sweeping section with cattle-guards and many decreasing radius turns. And the remaining one is the canyon section with massive shear drop offs and absolute hairpin turns combined with nice snakey switchbacks...it's the absolute scariest section and will have a death count for the year sign(s)... mainly because it's THE motorcyclist destination in Texas.

Would not reccomend driving through there at night...because deer and ability (or lack thereof) to see the terrain and flow of the road. My FR-S engine oil temp saw 240F running it in August...which is the hottest month in Texas.

Amarillo is on the way and Cadillac Ranch is neat.  Big Texas Steak Ranch is fun and has a kitchy little motor in that is preserved from the 50s.  BTSR is the originator of that thing where if you can eat an entire huge steak (and the potato, salad, and sides) it's free.  But beware, if you can't, it's like $60.

Not really on your way, but Austin is awesome.  It would also bring you in across the Texas plains through some really neat historic towns like Luckenbach and Fredericksburg.  It will bring you into Austin through the hill country.  Quite a sight to see.
