I had a Z32 slicktop. Around 2200 made over a 7 year run.
1979 MB 350SLC. Small V8. Fun interstate cruiser 1988 Toyota Camry AllTrac (aka AWD, but not turbocharged like the Celicas). Dad had a Lotus Cortina.
late to this … TL;DR
but my contribution would be my first, third, and sixth … Sunbeam Alpine, Jag XKE, and Jag Mkll sedan
My rarest car is my 1994 Alfa Romeo 164 LS. Not many 164s were sold on this side of the Atlantic- only about 6,900 164s were sold in the US, total. Rarer still is that it has the 24V V-6, which were only sold in MY94 and MY95.
1966 Caprice Sport Coupe with 396/325 and 4-speed, yellow over black, console with gauge package, in-dash tach, manual everything, no A/C.

Don't know how rare they are but I haven't seem them except at dealerships & VIR. I'm in eastern NC so things are probably different in other parts of the world. I also had a '60 Renault Dauphine, don't know how rare they were but they should've been nonexistent. Worst car I ever owned.
Oh, I almost forgot. I owned a 2011 Greg Norman Range Rover HSE. One of two. Mr. Norman owned its' twin.
Custom built SCCA D-sports racer 1 of 1
1987 Novakar F500 #3 of the first 6 cars built.
Beach Mk5C Formula Vee 1 of 285 built.
My Honda 125 GP bike was 1 of the 200 built.
As for production cars the 1200 or the Volvo 142E are the rarest but they aren't really very rare. No idea how many Pulsar NX-SE twin cams Nissan built, probably thousands.
I own a 1994 BMW 325is m technic, one of 150.
Our 1987 Pace Arrow is still going strong, going to an event later today and it will be towing my miata. I have taken to checking out the older coaches and this might be on it's way to becoming a "classic".
Or not. But the mauve carpet works with rest of the interior.
I'm not going to look too hard (can't find yearly production numbers), but the rarest car I have owned is a 97 Lumina, 1 of 2 million sold in total.

It is a forward slope cab for outward visibility on a 406. That was a 1967 with a om612 if I remember correctly. All of 100 horsepower....
66 Delta 88 2 door hardtop, with bucket seats and a floor shift is the best I got. I tend to drive pedestrian stuff.
Rarest for me is my TR250. 8480 made. Wiki says there are only only 600 left which I really find hard to believe. Next would be the Stags. I had 4 of them at one time. Thankfully all are gone.
My 1970 Opel GT is rare now, at least running and driving makes it rare. To the best of my knowledge, I have the only running and driving Opel GT in the area I live.
As for option configuration, the 1981 K5 Blazer I had was optioned very rare. 250ci inline-6, AT & 4X4. Window sticker in the glovebox showed it was delivered that way. Dealer told me Chevy never made that combination. Could get 6-cyl, manual trans & 4WD or 6-cyl, AT & 2WD but not 6-cyl, AT & 4WD like I was driving.
Had a Corolla fx16 don't see them often. And I now has an 06 Baja with a manual trans and just over 100k and not a spot of rust. That's about as close to rare as I have got.
My 5 speed 325ic M Technic appearance package car.
They made 149 5 speed appearance package cars, 142 in white, 7 in black. Mine is black :)
