Have you considered a really nice RV?

I own 2, and rent them for "glamping" on AirBnB and VRBO. They're in a really nice location (I rent the lots).

My units are lightly used, in like-new condition.  One is a 2020, one is a 2021.  I bought them for about half the price of new units, and it was well under 10% of the purchase price of small vacation properties.  My rents are about 75% of the rents of small vacation properties.

I charge a premium, and get good guests. The buy-in was pretty low, and if I decide I don't like where they are parked I can relocate them easily.

The only trick was hiring a cleaning person I could train in the specifics of RVs.

I'd happily live in one.

RVs might be an option to consider.  There are RV parks that deed a lot, you might be able to sublet.   Nice thing about an RV is you can move it if the location doesn't work out or when weather comes in.
