I can't say for 100% certainty, but I seem to remember that these and the Econoline wagons had optional V8s
My father and I swapped a 302 into an econoline pickup. Pretty straight forward bit we did have to modify the engine cover afterwards.
I LOVE those things and can't remember what he sold/traded it for but I wish he hadn't.

And yes, I'm sure a V8 would fit somehow...maybe not under the passenger compartment, but I assume that's what you want to do, as that's where the original engine is.
Sure, it's easy. It's basically an Econoline and the 302 is a very simple swap in one of those. I sometimes still have the itch to build an Econoline race car tow rig. Like this, but without the roof rack.

A guy around the corner from me was selling a non-running vab for $600 and couldn't get rid of it. I drooled on it a couple times as the body was in good shape. I was wondering how hard it would be to swap the body onto miata running gear....
