I've done some Thai red curry recently that was good for this season, can go from mild to hot with some diced chillies or paste.
Next on the list is making a mole sauce with chicken likely.
As others have mentioned chili is a staple dish.
Since your in florida maybe try making some cuban pork with some rice and beans or for sandwiches.
Slow cooker. Chunked up onion and red peppers. Carrots, maybe. Jar of your favourite spaghetti sauce, big can of tomatoes. Oregano, garlic, siracha or crushed Chilis or not, to your taste. Browned chicken drumsticks, or thighs, or breast if you are a pansy. Five or so hours on high.
Fresh bread, rice, pasta, whatever gets you through the night on the side.
I call it Cacciatore. Not sure that it actually is...
