'Learning To Fly' for sure. Also Pearl Jam's 'Jeremy' and The Offspring's 'Gone Away' (that one always reminds me of my dad). Everclear's 'Wonderful' and 'Father of Mine' (particularly the last verse, I'll yell it out if I'm driving) do the same.

The last two tracks of The Dark Side of the Moon, this may have something to do with dark side of the moon type activities when listening to it in the past.
Santana's opening guitar licks on Black Magic Woman. The first time I heard this back in the sixties, I was driving, and I had to pull over to the side of the road to hear this. Still gives me chills. Opening sax licks on Bob Seger's Turn the Page. I used to play this in a band years ago, and it would make everyone in the club stop talking and stare. Powerful stuff. Opening sax solo on Baker Street (no, I can't do that one!). Lots of riffs from Eric Clapton and Stevie Ray Vaughn.
I love Us & Them on Pink Floyd's The Dark Side of the Moon. The pipe organ in the beginning gets me every time.

Byzantine - Forged in the Heart of a Dying Star - fizzy part starts at 2:41. Hell the whole freakin' album is amazing, but that solo is one of my favorite individual parts
