GM LS V8
Mazda/Ford 2.0/2.3 MZR
AMC/Jeep 232/258/4.0 inline-6
Porsche Metzger flat-6
Honda J-series V6
In no order cuz some are "of their time"
SBC
Datsun L18
Mazda BPD/T
M113K
Might as well admit it, LSx
I tend to care more about transmissions than engines, but they're connected to something!
BMW M/S5x
MB OM606
Austin A Series
Volvo B18/20
AMC 242
1 through 5: GM Detroit Diesel 2 cycle. Pick any configuration from small pump to locomotive for the enumerations. Study that design and you’ll understand it was the work of true genius. A simple and completely scalable design. And yes, they can be turbo’d for more power.
1) Ford Kent (and all the associated engines that were born from it: Lotus TC, Cosworth MAE, BDA, etc)
2) Toyota 4AGE
3) RR Merlin
4) Jaguar XK6
5) Toss up between Cosworth DFV and Coventry Climax FW series
All are iconic engines that made a huge impact on the automotive community and I hope to have a vehicle powered by each one some day.
Not that anyone asked, but my car list using above would be:

Jaguar V12
Jaguar 3.8 E type
Offenhauser 250
Jaguar 4.0
Chevy Small block
426 Hemi
Ford 385 series/Boss 429
Sbc/Bbc
Ford small block including only the Boss 302. Not that Cleveland crap.

Edit-shuffled answers based on further clarifications and answers.
In reply to RoddyMac17 :
I forgot about the dfv. That is like the coolest engine ever.
It was successful in f1 for like 20 years or something ridiculous like that.

I like how you had to put an extra space between the SBC and your Jag engines.

Small block Chevy
4G63
Flathead Ford
Pratt & Whitney R-2800
426 Hemi
I like your Pratt and Whitney 2800 with its WW2 connection but I have to go with the Wright 1820 I used for well over 1000 hours of flight time in my Grumman S2E

No slight intended it just does stuff like that to me sometimes. I don't know how to correct it.

I need clarification of which XK 6 The 4.2 used from 1972-1987 based on the Iron block design of WW2 rooftop creation or the more Modern XK6 using the all aluminum 4 valve per cylinder 4.0?
My sentimental favorite is the 4.2 but for reliability efficiency and power the nod has to go with the 4.0
BMW M/S5x series
Nissan VQ30DE-K
Toyota 2JZ
Toyota 2UZ-FE simply for being bulletproof if not all that exciting
