I am heading to Paint Rock Alabama near Huntsville on the 14th to pick up a plasma table from Dynatorch. Thought I would see if anyone around there wanted to get a beer or had any suggestions of things worth checking out while there.

I was there for a few days several years ago. The space museum is worth the visit. The place that all unclaimed airline baggage goes to be sold is about 30 miles or so to the south. Not worth the visit.
Monte Sano State Park is nice. There are scenic overlooks, and the road up there is a really nice drive.
Second on the space museum.
I'd recommend watching the Muscle Sholes documentary on Netflix and then visit the museum which is in the area.
I have not visited the museum but I loved the film.
The space museum sounds cool but it is only open until 5. I don't think I will get there by then.
The Dynatorch people are good guys, I'd love to have one of their tables in the garage! 
Leon does a lot of autocross and other events as well.
If you could get to the space museum, it would be worth the trip. There's a SR71 out front and you don't need a ticket to see it. There're quite a few cool places to eat, and Huntsville is one of the leaders in microbreweries in the south.
