Brother in law also said both universal and disney are starting to get busy and they get so stupid busy at holiday time that employee free passes are blacked out from dec22-jan3 at his place(yes i tried to get you free passes)
Unlike the other 2 disney nuts here, for me it’s the crappiest place on earth. Probably because of my extreme anxiety in crowds and general hatred for most of humanity. Also tourists from european countries were the biggest most rude shiny happy people when we went there.

Gotta give the tourists something seedy to do or they might revolt.
Lots of karting options in that area. I've been to three, haven't seen them all.

Most of my advice has already been given except for the piece that my wife gets mad at me for sharing. So here it is: in your mind take the cash you are about to spend on Disney, place it in an imaginary pile in your mind, and light it on fire. If you can't do that without wincing, then you need to work towards that acceptance.
Having older kids will be WAY better, so you have that going for you. I can't wait to ride roller coasters at Universal with my older kids, but I'm not looking forward to the day when my youngest shrugs off wanting to meet Minnie.

Timely thread as we are looking to do Disney after the challenge next year.
Make a budget and then double it. If you're cool with that, you'll have a great time. With that in mind - It may really sting, but paying for the line-skipping pass last time I took the family to Universal was worth every penny (~2 years ago). While it pretty much doubled the price, we literally had 10x the amount of fun...and we still waited in lines plenty. It was crowded when we were there and if we hadn't sprung for the upgrade the day would have been a complete bust. Also, the Harry Potter ride, (in the main park) was awesome...and worth the wait.
My main advice would be to focus on one-park per day. I've only done a few single-day trips the last few years, and unless you're a frequent visitor, I don't understand how it's humanly possible to see more than one park if you're waiting in line for rides.
Apparently, informal around-the-world beer tours of Epcot Center is a thing.
I've never had issues with parking or traffic around Disney. I-4 through Orlando is a different story. Expect a shuttle ride either way...but that may even be less stress than a mad-rush to the monorail or bus back to your Disney property. Many of the off-site hotels run busses/shuttles, which may save you the $20-$30 you'd pay for parking.
Sea World has a few good rollercoasters. They also run specials/promotions for tickets, so it's often a bit cheaper than Disney.
Old Town USA (kissimmee) is right down the road from Disney and has a regular cruise-in car show...usually Friday or Saturday nights if I remember correctly. They also have lots of shops and a few thrill rides (catapult, bungee jump, etc)
