Take your average driver, somebody between the age of just learned to drive and not yet able to buy beer. Now, let's see what this newly fledged driver has never seen in a car and will likely never see in a car in his or her lifetime.
I will start..

Three on The Tree shifting
I'm considerably older, like 20 years older than your age group, and I've never seen a three on the tree, other than the occasional car show.
Joey
Never mind three on the tree, the average one won't ever see three (pedals) on the floor.
Cassette Decks
Spark advance/retard on the steering wheel.
Floor mounted starter button.
Manual pull choke on the dash.
6V battery.

Those high beam buttons on the floor
Cigarette lighters.
8 track players.
GMs annoying multi-function wiper, cruise, turn signal, stalk.
A lot of the things listed those of us in our 30's have barely seen, the only car I had with a manual choke was my old rx7... And that car was built the year I was borned.

I do drive an old van that came with a cassette player and has the floor mounted high beam button, but it still has power windows! They still work, too. well, mostly.

That surprises me, I'm not much older than you and my first car was a 1980 pickup with a 3 on the tree.
My contributions:
Floor mounted High/low beam switch
Non variable speed wipers
Vacuum operated wipers, retractable lights.
Non-digital stereo
Wing/vent windows
Foot well vents instead of air-conditioning
I am feeling old reading this as I have had cars with everything listed so far.

Something with a carburetor.
Come to think of it, i've only ever driven something carbureted 3 times in my life... even my "old" E150 is EFI.

I have owned cars with all of those things, and I miss all of those things.
My dads 76 GMC pickup had an 8 track player, so did our gigantic home stereo that also had a turntable and was as big as a dresser. Get off my lawn!

Bench seats for the front are getting rare.
Sealed beam headlights
Dash mounted ignition or wiper switch.
