First thoughts were Blacksmith or Locomotive engineer.

I'd be selling high end four wheel buggy parts, maybe?
Honestly, I'd probably try to write news media in a small to medium sized town.
Dressmaker. Seriously... have you seen how awesome those ladies dress?
I have some real skills with the fabric, I get to make women look good, and they would assume I'm gay which means I get to see them naked.
Stealth. Oh yeah.
I would be working on the Railroad in some manner. I would like to think locomotive engineer or fireman, but even a station master would be cool.
My great grandfather was a blacksmith, so I would probably have been working for him by the time I turned eight.
Rancher.
There was so much land back then and it was soooo cheap, most people just didn't know what to do with large amounts of land.
Till the railroad came...
Something railroad/steam power or involving blacksmithing or gunsmithing. Or I'd run a saloon/gamblin'parlor/hoor-house.
I would be a Cartwright. Yep, I loves me some Bonanza!
I actually think I could be pretty good at making and repairing carts.

I would want to be Little Joe.
Blacksmith / farrier. Fire, check. Metal, check. Hammers of all sizes, check. And horses all seem to like me.
That or locomotive & rail equipment repair.
A lot of my ancestors were miners, under no circumstance would I want to continue that tradition.

Probably Railroad Conductor. Mostly so I could wear my vest and pocket watch more often.
